Sandwich cookies can be found in all kinds of varieties, but here's a few that not only look good, but also look at least a bit like the ones pictured.

Gelatin Molds - Most of the decent molds I found were on eBay, so it seems silly to link to them. However I did find a few unique gelatin recipes to put in the mold of your choice.
I actually found a wonderful Dia de los Muertos site that not only sells molds so you can make your own edible skull, but also has recipes and all the other supplies needed - you can even buy a pre-made sugar skull if you're not feeling up to making your own. They also have step-by-step instructions for making them out of sugar or chocolate! :)
