I couldn't find an exact recipe for the salmon dish; however I did find quite a few that were similar and sounded pretty yummy!
As for the scones, there are all kinds of recipes for those depending on what you want - as can be seen on the Joy of Baking website.
The Pain de Campagne, which is mentioned, but not shown, is French for "country bread"; it typically comes in a large, rounded loaf and tastes similar to American Sourdough. There are many recipes available for it, as well, but this one claims to be for "beginners".
